No one knows for sure where or who first put whiskey in charred barrels. The very first charring of a barrel may well have been done to sanitize it after
storing or shipping other products. Or the staves may have accidentally charred after sitting over a fire too long. The beneficial effect of the char on the aging whiskey was likely discovered by accident. What we do know is that Dr. James
Crow, while he was master distiller at the Old Oscar Pepper Distillery on this site, was one of the first to recognize the benefits of charring the barrels and converted his entire production to charred barrels.
